Cafe Pa Da Serra Backstory:
In 2003, with new trends in coffee growing and the devaluation of traditional coffee cultivation, the farm began transitioning to commercial coffee cultivation, producing specialty mountain coffees with the Mundo Novo, Yellow Catuaí, Ruby, Topaz, Yellow Catucaí (2SL and 20/15) cultivars, and since 2016, a plot of Yellow Bourbon. In 2009, the farm was certified by Certifica Minas Café, where all production follows strict quality and traceability standards, respecting rural workers and the environment.
In 2017, the farm scored 100% in Certifica Minas and UTZ, winning 1st place (wet processing) in the 1st Cooperrita Rare and Surprising Coffees Contest. Mara, the current producer, received the Outstanding Rural Producer certificate from the Government of Minas Gerais for her brilliant performance in the agribusiness sector.
In 2018, Mara was invited to join the group of Coffee Entrepreneur Women, which culminated in 2019 in the 1st Meeting of Coffee Entrepreneur Women.
Taste: 8.3/10
The flavor begins with a soft kumquat note that smooths out into a clean milk chocolate and vanilla finish. The very soft acidity and full bodiness of the cup paired with the yellow fruit start transports you to a tropical cafe. As the coffee cools the flavor changes, pronouncing the yellow fruit at the start more and finishing with the milk chocolate. The more that I sip, the more I enjoy the coffee as it cools, which is intriguing to me, but is incredibly refreshing on this hot summer day. Definitely a coffee to drink slowly and enjoy the flavors as they dance as the cup cools. Perfect for a nice relaxing start to a morning that cools as the sun heats up the earth.
I was surprised when it shipped from Brazil and still tasted incredible.
Aroma: 7.4/10
A wonderful fruity aroma with hints of spices. It almost contradicts the smoothness of the cup you are about to drink. While this aroma won't have you taking big whiffs, it is a joy to open the canister to pour the coffee.
Value:
I can’t do a value rating on this one because I got a sneak peak. It’s done by my good friend in Brazil, so from what he’s told me it won’t be too pricey. Seems like it will be in the daily drinker price range. I will update this rating once I know the correct price.
